Oat and bean bickies

60 g canned cannellini beans, drained and rinsed
1 egg
60 g butter
150 g brown sugar
1 tsp vanilla essence

110 g plain flour
1/2 tsp bicarb soda
120 g cup rolled oats

Add 150 g dark chocolate bits
dried apricots chopped and coconut
whatever you fancy

Preheat oven to 190C and line 2 large oven trays with baking paper.

Process beans, egg, butter, sugar and vanilla until smooth.
Add flour, bi-carb soda, oats (and other additions). Knead well
Place heaped teaspoons (about 30) of mixture, slightly flattened, onto lined baking tray,
Bake for 15 minutes or until golden around edges and cooked through.
Cool on a wire rack.
