Green Pesto

Spinach pesto, broccoli pesto, or other greens. Whatever the base, you will need 2 cupfulls, chopped up.

Add
1 cup of basil
1/2 cup oven toasted walnuts
1/2 green apple
6 tbsp Extra Virgin Olive Oil
2 tbsp white vinegar
1 garlic clove salt to taste

Place all in a food processor and puree until smooth.

Serve with pasta, brown rice, with veggies, as a dip, or (my favourite) as a spread on bread and butter

Never thought of using walnuts in my pesto. Pine nuts are getting expensive,so I will give it a try. :text-thankyou:
